2 cups vegetable stock
salt and pepper to taste
1/4 cup vegan butter (optional)
1/4 cup maple syrup
1 bay leaf
Peel turnip. Cup off stem and dice into 1 inch pieces. Add to large cooking pot with the vegetable stock. Add some water to the pot until the turnip is just covered, and put bay leaf in the pot. Cover and bring to a boil, then reduce heat to medium low and simmer until turnip is tender. Drain and remove your bay leaf. Return pot to heat and melt the vegan butter. Add the turnip back to the pot and mash. Add your maple syrup and salt and pepper to taste, then stir to combine. Garnish with chopped parsley if you’d like, and enjoy!
