I’m obsessed with kale and smoothies these days. I just can’t seem to get enough, which isn’t such a bad thing considering the health benefits! The other day I was happily sipping my kale smoothie and thought “How can I make this even healthier?”. So I tinkered around with it a bit, and mixed up this fantastic tasting, healthy concoction. It’s not much different than my original kale smoothie recipe, but does have a couple of added health benefits. Coconut water is added for even more potassium and electrolytes, and superfood chia seeds provide added fiber, antioxidants, and omega 3′s. Whip this smoothie up for breakfast and before lunch you’ve already had 2 servings of vegetables, 3 servings of fruit, and a generous amount of vitamins and nutrients. 2 cups rinsed, chopped kale
1 banana (even better if you freeze it unpeeled the night before)
1 kiwi, peeled and sliced
1 cup frozen mango chunks
1 cup coconut water
1 1/2 tablespoon chia seeds
about 1/2 cup crushed ice
Pour your coconut water into a small glass and mix in the chia seeds. Let them sit in the water (about five minutes) while you prep your fruit and veggies, allowing the seeds to soften. This step is important, because otherwise you’ll be sucking crunchy seeds up through your straw. Add the remaining ingredients to your blender, and add the water and seeds in last. Blend until everything is nice and smooth, adding more water if needed. Pour into your favorite glass or smoothie cup, add a straw, and enjoy!
