Strawberry Mint Quinoa Salad serves 2 4 cups baby butter lettuce 8 large strawberries, hulled and sliced 4 or 5 mint leaves, sliced 2/3 cup quinoa, cooked 1/4 cup chopped almonds vegan balsamic vinaigrette (I like this one) Evenly divide your ingredients between two large bowls, and drizzle with vegan balsamic vinaigrette.
