Baked Smashed Potatoes! – Milk Free Recipes

This recipe is courtesy of my Sister-In-Law.

Ingredients:

Small red potatoes (the little bitty ones) 
Olive Oil 
Salt 
Pepper


Boil the potatoes in water until easily pierced with a fork.
Drain and rinse with cold water

Preheat oven to 425 or 450 (I like 450)
Generously oil a cookie sheet
Place potatoes on the cookie sheet and then smash with a potato masher. Smash enough to flatten and open up the potato, but not so much that they are falling apart too much.
Pour olive oil into each potato, don’t skimp!
Sprinkle salt and pepper to taste. You could even use your favorite herb, but salt and pepper is just lovely.
Bake until golden brown to well done- about 15-20 minutes.

Cool slightly and ENJOY!!!
