This pork roast was fall-apart tender, and the apples added fantastic flavor. Although more of a fall dish, this roast is fast, easy, and great when the kids are asking for pork chops and applesauce.
2.5 lbs boneless pork loin roast
1 large onion, sliced
4 granny apples, peeled, cored and sliced
1/2 cup white wine
1 tablespoon minced ginger
2 tablespoons brown sugar
Rub ginger and sugar all over roast and place in slow cooker. Add onion, apple, and wine. Cook on low 8 hours. Serve with apples and onions (apples will be very soft, and can be fork mashed into “sauce”).
